This lavender syrup is one of those recipes that feels fancy but is actually super simple. It’s floral, sweet, and turns anything from a plain iced latte to a basic lemonade into something you’d pay $6+ for at a café.

This syrup also makes a really thoughtful DIY gift. Pour it into a small glass bottle, tie it with a ribbon, and you’ll have a handmade present that looks way more impressive than it is.

If you’ve never tried lavender in drinks or desserts, it has a subtle, calming flavor that pairs really well with vanilla, lemon, honey, and berries. Just make sure you’re using food-grade lavender meant for culinary use.

It’s 10pm. My feet hurt, my back hurts, my camera battery is long dead, and my kitchen looks like a tornado hit it. I’ve been making recipes and taking photos ALL DAY LONG. But even with zero energy left, I had to share this lavender syrup with you because I’m genuinely obsessed.

If you’ve never made simple syrup at home, this is the easiest recipe.

Homemade Lavender Syrup Recipe:

Ingredients

Instructions:

1. Dissolve the sugar

In a small saucepan, combine the sugar, water, and a pinch of salt. Stir over medium heat until the sugar fully dissolves.

2. Add the lavender

Once your sugar water is clear, toss in the lavender buds and let it simmer gently for about 30 minutes.

Send it to yourself now and try it out when you’re ready!

3. Strain the buds

Remove from heat and use a fine mesh strainer to get all the lavender out.

4. Add a little color (optional)

If you’re feeling extra, add a couple drops of food coloring to give it that purple color.

5. Cool and store

Let it cool completely, then pour into a clean jar or bottle and store it in the fridge.

Notes:

  • Make sure you’re using lavender specifically labeled for culinary use. This is super important for both flavor and safety.
  • A drop or two of food coloring is enough! You can mix red and blue to get that soft lavender shade, or skip it entirely if you prefer it natural.
  • Store your lavender syrup in a clean, airtight jar or bottle in the fridge. It should last about 1–2 weeks.

How to Use Lavender Syrup:

You can use lavender syrup in so many cozy ways! Add a splash to your morning latte or iced coffee for a floral twist, stir it into lemonade or sparkling water for a refreshing drink, or drizzle it over pancakes and desserts for a subtle, sweet flavor. It also makes a great addition to cocktails or mocktails when you want to impress guests with something a little different.
